In San Sebastián, that logic doesn't apply.

The first stop is a counter, not a table. A single pintxo arrives, something precise and small, anchovy pressed against a sliver of bread with a detail on top that you didn't expect. A glass of txakoli is poured from high above, cold and slightly sparkling, the way it has always been served here. You finish it standing. You put the glass down.

And then you step back out into the street.

That's when you understand what kind of evening this is.

The next bar feels different. Different energy, different specialty, different pour. You're not looking for your table. You're moving with the street, stopping where something pulls you in, staying only as long as the moment asks.
